Whenever I have company, it most often happens in the summer due to the fact that I live ten minutes away from the beach. This happens to be the time that I am working long days and can only manage to take off in the afternoon because the busiest time at the bakery is the morning. I like to be a great host and in order to do so I like to have breakfast ready. I always turn to Paula Deen’s Baked Potato Omelette. My company can just heat a piece up in the morning and pair it with a side of fruit. Here’s the recipe for your next gathering.
Ingredients
1 package refrigerated hash browns
1 package sausage (I use Bob Evans),
Cooked, crumbled and drained
10 slices bacon
8 oz shredded mozzarella and cheddar blend
10 eggs
2 c half and half
1 tsp chives
Directions
Preheat oven to 350. Lightly grease 13×9 baking dish. Place hash browns in dish pressing gently. Layer sausage, bacon and cheese. Whisk together Eva and remaining ingredients. Pour evenly over casserole. Bake for 35-45 minutes or until lightly browned and set. Enjoy!
