Copy-Cat KIND Bars

I’ve been hatching a plan to replicate a KIND bar for a long time, and I finally followed through. I did a lot of snooping on the food blogs to find a feasible recipe. After looking at a few different versions, it was clear that there was a pretty consistent formula, which was a good sign.

KIND bars were a little bit of an investment because they’re basically all nuts. Also, they are mostly specialty ingredients that I don’t usually keep in my pantry. I found ground flax seed and millet pretty easily, but I had to hunt for the brown rice syrup. Is it a sugar? Is it a syrup? Is it a honey? Is it a gluten free or ethnic food? Turns out in Harris Teeter it’s none of the above. I had to go to Whole Foods and found it in the sugar and sugar alternative section.

I will caution you, the first time I made these they were a complete and expensive fail. I did not boil the syrup and honey mixture for long enough, it didn’t thicken properly, and the bars just fell apart. I can’t remember the last time I was that mad at everything in my kitchen. Even the second time around the bars were pretty sticky, so I recommend cutting them into bite size squares and storing them in your fridge for easy snacking. The taste, nutrition, and general texture are the redeeming factors.

Copy-Cat KIND Bars

Yields 10 bars, adapted from Eat Urself Skinny

Ingredients

  • ½ cup unsalted roasted almonds, chopped
  • ½ cup unsalted cashews, chopped
  • ½ cup roasted walnuts, chopped
  • ⅓ cup puffed millet
  • 1 Tbs flaxseed meal
  • ¼ cup brown rice syrup
  • 2 Tbs honey
  • ½ tsp vanilla
  • ½ tsp salt
  • ½ cup chocolate chips

Method

  1. Line an 8 x 8 pan with parchment paper.
  2. Coat a mixing bowl with non-stick spray. Combine nuts, millet, and flax in the bowl and set aside.
  3. Put a small pot on the stove on medium heat. Add brown rice syrup, honey, vanilla, and salt. Bring the mixture to a boil and wish constantly at a boil for two full minutes.
  4. Pour the liquid over the nut mixture. Mix until ingredients are evenly coated and pour into the parchment lined pan. Flatten mixture firmly into the pan with no gaps.Sadie Dishes Copy Cat KIND Bars
  5. Allow to cool at room temperature for 20 minutes, then turn out onto a cutting board and cut into 10 bars. Allow to cool completely.
  6. Melt chocolate chips in microwave (heat for 30 seconds at a time until melted). Drizzle over cooled bars.Sadie Dishes Copy Cat KIND Bars
  7. Store at room temp in sealed container, or skip the chocolate step and store in  refrigerator (the chocolate might turn white in the fridge).

2016 New Years Resolutions

Happy New Year!!

Call me corny, but I think the New Year is as good a time as any to set some new goals. Here goes:

  1. I’m always always trying to be a little more financially savvy. In 2015 I made some strides with organizing my bank accounts and credit cards to be more centralized and use deals like “cash back” and points to my advantage. In 2016 I’m planning to get more savvy about my retirement and investment situation so I know I’m making the most of it.
  2. Tying into the financial goals, I want to up my travel game in 2016. I took the standard trips in 2015 plus a couple fun long weekends in new places. I have a couple trips in the planning phase right now, and I’m hoping for some more opportunities to pop up this year. I know I’m going to have to be savvy with my budget and vacation days and I won’t be able to make every trip or destination wedding work, but I guess that’s just being an adult.
  3. Speaking of weddings, my best friend is getting married this year! I want to be the best Maid of Honor I can be. As we all know, wedding planning can be complicated and I’m going to do my best to be helpful and honest, but above all- supportive. I will not contribute to drama. I repeat. I will not contribute to drama.
  4. I have a bad habit of declining social invitations and skipping work related happy hours. To my credit, however, I did start attending more happy hours in the second half of 2015. My two general issues are: 1. I’m an introvert and socializing in certain settings can be very draining or stressful, and 2. I don’t like to drink very frequently (maybe five times a year total) which happens to be the opposite of DC culture in general. I would like to try to say yes to more invitations in 2016. No promises because this is one of the scarier ones for me, but I will try.
  5. Lastly, as usual, I want to do my best to be healthy. I’ve had some recent challenges that I’m anxious to resolve. Nothing serious, just some kinks that I have to work out with my doctor. So I need to keep communicating with my doctors, and do my best to hold up my end of the bargain with my own choices.

My Top Ten Songs of 2015

When a great new song comes out I have a bad habit of listening to it non-stop for days or weeks at a time until I get completely sick of it. Every single time I think to myself- there will never be a new song as good as this one. These are the songs that made me feel that way in 2015:

I will caveat this list by saying these are not necessarily the most beautiful or profound songs of the year (i.e. Adele isn’t on the list). But these songs got me through my daily commute, some very long drives, and about 300 workouts, and that’s all I need.
