Chicken Enchiladas

With Cinco de Mayo upon us, I thought it would be appropriate to give you the recipe for one of my favorite go to Mexican-inspired meals.  It is a great dish if you are cooking for a group.  You can easily get 12 servings out of this dish.  Just add your favorite Mexican side dished and your fiesta is ready and waiting for you.  Don’t forget the tequila!

Chicken Enchiladas

Ingredients

One medium onion chopped, 4 tbsp butter, 1/4 cup flour, 2 cups chicken broth, 1 tsp. chicken bouillon, 8 oz. sour cream, one roaster chicken (picked and deboned), 2 cups shredded cheddar cheese, 4 oz. can green chilies (drained), 1 tsp chili powder, 8 large flour tortillas

Directions

In a saucepan, saute onion in butter until tender. Stir in flour and add chicken broth and bouillon. Cook and stir until thickened. Remove from heat and stir in sour cream.

In large bowl, combine 1 cup cooked sauce, chicken, 1 cup cheese, chilies and chili powder. Mix well.

Fill each tortilla with equal portions of chicken mixture. Roll up and arrange in greased 9 x 13 inch pan. Spoon remaining sauce over tortillas.  Sprinkle with remaining cheese.

Bake at 350 for 25 minutes, until bubbly.  Enjoy!

Downton Abbey

Today marks the one year anniversary of our blog.  I would like to give a shout out to my BFF, Sadie, for being the inspiration behind this blog.  We discussed the possibility of a blog over a lovely brunch at the Blue Pig at Congress Hall in Cape May.  Soon after, we made that possibility a reality and I think we are much better for it.  I enjoy putting my thoughts and recipes out there to anyone who wants to read them.

On that note, here’s another one of my thoughts.  If you have not yet discovered the phenomenon called Downton Abbey, you must indulge yourself and give it a try.  I know that once you are introduced to the inner workings of the upstairs downstairs relationships of Downton Abbey, you will become enamored with everything the estate has to offer.  Its mystique and charm entices you to want more and more.  You won’t be able to stop watching.  I went to my local library to get season 1 and 2 on DVD.  Season 3 is currently being featured on Masterpiece Classic on PBS.  It airs on Sundays at 9.  I only wish I could be Mary and find my Matthew to make my life complete.

Five Things

You probably don’t know about me.

1. I’m a closet disco fan.  I heart Diana Ross.  Always have, Always will.  And Donna Summers, and the Bee Gees… Disco music is great workout music, especially when I’ve heard the current Top 40 hits a thousand times each this week.  I do know how to hustle.  You better believe I thoroughly enjoyed last week’s episode of Glee!

2.  I can swing dance.  And so can my older brother.  We took lessons together one year when we were in middle school.  Oh yeah, we were cool kids.  It’s not a skill we use very often but whenever there is a swing band at a wedding or event I am always prepared to bust a move.

3. My favorite present to get is flowers. They’re pretty, smell good, and make me happy.  I try to keep fresh flowers on my kitchen table whenever I can.

4. I watch Home Improvement and 19 Kids and Counting while I’m getting ready in the morning.  I’m a morning person so I usually get up early enough to shower, get dressed, and eat breakfast while hanging with the Taylors or the Duggars on weekday mornings.  They get me moving in a positive and light-hearted way every day.

5.  I don’t like bacon. I know, I’m weird.  And it’s not like it has anything to do with any health initiative of mine.  I even think it smells good when it’s cooking.  But for me it has an over powering taste that takes over any dish.  And since it’s not the healthiest food, I’m at peace with my aversion.
