Treat Time!

Rice Krispie treats.  Need I say more?

This has become my go-to option when I need a quick and tasty treat to share with a group.  Rice Krispie treats are always a crowd pleaser.  It’s a little disheartening because they’re so easy to make and yet so delicious.  To amp them up a little I try to mix in some interesting ingredients.  Just so it looks like I put some effort into the situation.  This time I went with coconut, almonds, and white chocolate chips.  A winning combination.

Coconut Almond White Chocolate Chip Rice Krispie Treats

Yields approximately 18 muffin cup portions

Ingredients

  • 1/2 stick of butter (4 Tbs)
  • slash of vanilla extract
  • 1 16 oz bag of mini marshmallows (slightly bigger then the standard 10 oz bag)
  • 6 cups Rice Krispies (or generic equivalent)
  • 1 packed cup of coconut flakes
  • 1 cup slivered almonds
  • 10- 12 oz white chocolate chips
  • rainbow sprinkles (optional, but highly recommended)

Method

  1. Melt butter in pot over medium heat.  When butter is melted, add 3/4 of the marshmallows.  Add vanilla extract (be careful because it has alcohol in it so there is potential for flames).
  2. Combine 3 cups of Rice Krispies, coconut, almonds, and the rest of the marshmallows in large bowl.
  3. When the marshmallows are completely melted, turn off the heat and add the other 3 cups of Rice Krispies to the pot.  Mix to combine the pour mixture into the bowl with the other add ins.
  4. When ingredients are well combined, add white chocolate chips and sprinkles.  Mix to combine.  (if you add the sprinkles and chocolate too early it will melt more than you want)
  5. Transfer mixture into muffin cups or desired pan.  Allow to cool or chill in fridge.  Enjoy!

More Than a Maxxinista

I found these earrings in a boutique in Stone Harbor.  At $18, they are a steal.  It was a small price to pay for a big statement.  You can spice up any ensemble by putting these on, which made them difficult to pass up.  I don’t purchase jewelry too often because I have an extensive amount of it, but when I find something that wows me I snatch it up.   I must say I am a sucker for Francesca’s Collection and Charming Charlie’s because you can find some real deals at these stores to add to your repertoire.

I found this luxurious leather bag by Sabina at none other than TJ Maxx.  It was a brand I did not recognize, but I used my smart phone to look up the actual value of this bag.  I found that it retailed at over $250 and I got it at TJ Maxx for $139.99.  It was an end of the summer splurge to reward myself for working hard all summer long.  What’s life without a little luxury.  We have to spoil ourselves sometimes and enjoy life.  As long as we keep our budgets realistic then there won’t be a problem when it comes to paying the mortgage and utility bills.  They were my fashion finds for August and I’m currently working on new ones for September 😉

Holding It Back

My new favorite way to accessorize is at the gym.  I am loving bright and crazy headbands these days.  I used to have a lot of trouble keeping headbands from falling off while I was working out.  I guess my head shape combined with my thin and slippery hair made headbands like these slide off:

But then I decided to turn to the experts, and I got some Nike headbands.  It turns out, they work!  I followed that purchase up with some funkier headbands from Under Armour.  And they’re great too!  I bet they companies put more effort into research and development for their products, so I’m not surprised that their headbands preform well.

I just got some more really fun headbands from UA that have great sayings.  My favorite is: All I Do is Win.
